Beaune is famous for its wine and food, the latter of which is mainly based with beef, snails, pork, chicken, eggs, butter and cream. While the town is charming in many ways, it's vegan Hell. Finally, a little Heaven has come our way with Thomas Bouvart's Patisserie which recently began offering passionfruit raspberry tarts, then cassis raspberry tarts and now chocolate mandarin tarts. All three delicious tarts start with a crispy crust (which has flaxseed as one of the ingredients) and then a very fine smooth fruit filling. The passionfruit and the black current tarts, have a strong burst of the fruit flavor, which is complemented by fresh sweet raspberries. The mandarin chocolate is my favorite, with a subtle delicate mandarin filling decorated with swirls of dark chocolate vegan ganache. Bouvarts is also 1 of only 3 places in Beaune, where you can order a vegan hot chocolate or cappuccino. The owners speak French, English, Spanish and a variety of Indian languages. Parul who manages the front is delightful. She's friendly and helpful. Her influence, I suspect was a driving force to experiment with vegan options in a geolocation so dependant on animal products. There are seats outside as well as in the back. A beautiful ceiling reminds you of what a Celestial experience these tarts are! The one drawback is that the non-vegans have discovered the vegan tarts so they sell out.
